This Lemon Blueberry Baked Oats recipe combines zesty lemon, creamy cottage cheese, and Mountain Wild Blueberry overnight oats to make a high-protein, delicious breakfast casserole.
1 tbsp ground flax seeds, or add another egg if not using
1 tsp baking powder
Lemon Icing
⅓ cup powdered sugar
1 tbsp lemon juice
Directions
Preheat oven to 350ºF.
In a 9x9 baking dish, add the cottage cheese, egg(s), lemon juice, lemon zest, honey, coconut oil, vanilla extract, and milk. Stir until well combined.
Add the oats, flax seeds, and baking powder and stir well to combine.
Bake for 30-35 minutes, or until it’s set and the edges turn golden brown.
Lemon Icing
Add the powdered sugar and lemon juice to a small bowl and stir to combine. Drizzle over the baked oats and serve immediately.
